I may be incorrect about some of the history.

I understand that beer and Gin because the fermenting process killed microbes therefore it was a common drink to hydrate.

Curious, Why do lawyers call it the Bar? Why are alcohol establishments call a 'Bar?"

A 'butt' was a Medieval unit of measure for wine. Technically, a buttload of wine is about 475 liters (126 gal).
